Recipe Corner: Beef Vegetable Barley Soup


Dick prepared this delicious soup last night so I thought it would be fun to share the recipe. This is very easy, healthy, and delicious. Give it a try!

Beef Vegetable Barley Soup

1 lb beef stew meat browned
1 cup chopped onion
1 clove garlic crushed
2 stalks celery diced

Saute veggies in oil, add beef and

2 cups beef broth
5 cups water
1/2 cup barley
2 carrots diced
1 14 oz. can diced tomatoes
4 beef bullion cubes
1/2 tsp basil
1 bay leaf
salt and pepper to taste

Simmer for 45 minutes, then add

1 can corn
1 can peas drained
4 cups chopped cabbage
Simmer an additional 15 minutes.
