Fancy Scrambled Eggs

Fancy Scrambled Eggs


4 tbsp butter
2 tbsp flour
2 1/2 cups milk
1 tsp salt
1/4 tsp pepper
1 lb mushrooms, sliced
1 green pepper, diced
6 scallions, diced
24 eggs
2 cups cheddar cheese
2 cups baked ham, chopped (optional)
1 cup bread crumbs


Prepare White Sauce:

Melt 2 Tbsp. butter in a heavy skillet.
Add 2 Tbsp. flour, stir and cook over low heat for 2-3 minutes until light brown.
Slowly stir in 2 cups milk over medium heat, stirring constantly until mixture is thick and bubbly.
Add 1 tsp. salt and 1/4 tsp. pepper while stirring.

Saute in 2 Tbsp. butter, then set aside:
3/4 – 1 lb. sliced mushrooms
1 green pepper, diced
6 scallions, diced

Scramble 24 eggs with 1/2 cup milk, stirred until eggs are very soft. Fold in white sauce, sauteed vegetables, 2 cups shredded cheddar and (optional) 2 cups baked ham, chopped.

Place into a 9 X 13 casserole dish.

Melt 2 Tbsp. butter and stir in 1 cup bread crumbs. Sprinkle buttered bread crumbs on top of casserole and bake at 350 degrees for 30 – 40 minutes.
